If you want to completely delete a job from your resume, just head to your Simplify Profile → Work Experience section and click the bin icon next to the entry you want to remove.
If you're only looking to remove it from a specific tailored resume (but keep it in your profile), scroll down to that experience in the Resume Builder, click Display Options, and then uncheck Show Experience — it’ll hide it from just that version.
