Thanks for the note — the builder can do this today, it's just called hiding rather than deleting.
To drop one item rather than a whole block, open Display options on that entry and uncheck Show Experience, Show Education, or Show Project. The entry stays saved on the resume but is left out of the export, so you can keep an older role or a project off the page without losing it. You can trim finer than that too: each bullet has a checkbox beside it that hides just that line, which is often enough to win back the last few lines.
If you do want a whole block gone, every built-in section has a Hide [Section] control in its top left. Sections you added yourself with Add Custom Section can be removed outright with the trash icon; the built-in ones (Education, Experience, Projects, Skills, and so on) hide rather than delete.
